It is the discovery of a manor farm in Andria, in the Murge area, between the plateau and the Adriatic; in a house where one winter a dairy farmer invented a way to preserve the stracciatella

Here is the burrata, fresh and stretchable, its heart and cream.
An Italian treasure that the entire world envies, it gives its best with salads and tomatoes Caressed only by a few drops of extra virgin olive oil.

But it also lends itself to delicious situations: during the summer with a cold pasta, or during the winter with fried vegetables, with pumpkins, excellent in every season when combined with a pizza’s flavors.
